Try Our Easy and Healthy(ish) Pancake Recipe

If you are worried about Mother’s Day brunch ruing your new quarantine healthy eating journey, then we have a healthy(ish) pancake recipe that will leave you feeling satisfied without feeling sick. With only a few ingredients, these pancakes will be so easy to make this weekend, or every weekend… or every morning!

Healthy(ish) Pancake Recipe

Ingredients:

  • 1 cup oats
  • 1 egg
  • 1 overripe banana
  • 1/2 tsp baking powder

Directions: 

In a blender or food processor, blend 1/2 a cup of your oats until the oats break down into finer bits, almost like flour. Set aside.

In a large bowl, add in your ripe banana and mash with a fork until smooth. Add in your egg and beat the mixture together until combined.

Add your blended oat flour, the remaining 1/2 cup of oats baking powder into your banana and egg mixture. Mix until smooth to make your batter.

In a large skillet or griddle, add a drizzle of your favorite oil or butter, and spoon out a dollop of your batter on to the skillet. Cook for 2-3 minutes on each side.

Toppings:

To stay on the healthy side, consider topping your pancakes with natural peanut butter, fresh fruit or organic honey, and avoid sugary syrups.
